High Calcium Greens and Cheese Frittata Recipe

High Calcium Greens and Cheese Frittata

INGREDIENTS:

·       8 x Large Eggs

·       ½ cup reduced fat milk (or calcium fortified plant milk) 

·       1 tablespoon Extra Virgin Olive Oil

·       2 x cloves garlic, minced

·       1 x brown onion, finely chopped

·       1 x head of broccoli, finely chopped

·       2 cups Baby Spinach (or other leafy green), roughly chopped

·       2/3 cup reduced fat cheddar cheese, grated

·       Pinch of salt and pepper

·       2-3 tbsp water

 

METHOD

Preheat the oven to 190 °C. 

In a large mixing bowl, lightly whisk the eggs, milk, half of the grated cheese, salt and pepper.

Heat a pan over medium heat, add the olive oil, onion and garlic. Cook, stirring until the onion has softened, about 3- 5 minutes.

Add the broccoli to the pan, add the water and stir, then cover  the pan for 2-3 minutes to allow the broccoli to cook. 

Uncover, and add the spinach and stir over a low heat for 30-60 seconds, just until the spinach starts to wilt.

Grease a baking tray, lay the broccoli mixture over the base of the tray and add the egg mixture to the tray, ensuring it is evenly distributed.

Baked for ~25-30minutes or until the centre has set.

Remove from oven and let sit for 5-10minutes before slicing into 6 pieces. 

Enjoy with a fresh salad or some steamed vegetables.
