Salmon & Vegetable Tray-Bake

Try this recipe for an omega-3, fibre and antioxidant packed mood booster

Serves 4

Ingredients:

4 salmon filets

2 red onions, cut into 8 wedges. 

1 bunch broccolini

1 medium zucchini cut into cm rounds

1 yellow capsicum, sliced into 8ths 

1 red capsicum, sliced into 8ths

1 tray cherry tomatoes on the vine, cut into small bunches

1 lemon, cut into quarters

Small pinch salt

1 tablespoon dried herbs ie oregano or thyme

3 tablespoons extra virgin olive oil

1/3 cup fresh parsley, roughly chopped

 

Method: 

  1. Pre-heat oven to 200’C

  2. Toss all vegetables and lemon in olive oil and place all except the vine tomatoes in a large baking dish

  3. Place tray in oven and roast for 20 mins

  4. Remove from oven, turning vegetables. Place salmon filets and vine tomatoes into the tray, sprinkle tray with a small pinch of salt and dried herbs. Place back into oven for 20 minutes or until salmon flakes easily.

  5. Sprinkle with chopped parsley and serve.
