Ingredients
800 g potatoes, cut into wedges (skin on)
2 tbsp olive oil
½ cup stock
Juice of 1 lemon
2 cloves garlic, minced
1 tbsp dried oregano (or 2 tbsp fresh oregano, chopped)
½ tsp salt
¼ tsp black pepper
Method
Preheat the oven to 200°C (fan-forced 180°C). Grease a baking dish.
Place potato wedges into the baking dish and pour the stock, olive oil and lemon juice over, stirring to ensure all of the potatoes are covered.
Sprinkle over the garlic, oregano, salt and pepper. Toss well to coat evenly.
Cover the dish with a lid or foil and place in the oven.
Bake covered for ~30minutes, before removing the foil and returning to the oven for a further 15-20minutes until the potatoes have absorbed most of the liquid and the edges have gained some colour.
